There will be apps Google will frown upon too like newpipe. I’d rather F-droid not even bother with trying to comply and register with Google, and just have it so either it works normally for Custom Rom users and other people can rely on adb installs.
I like that lot of the apps you can also export the app data so you can restore it on a new devices. I didn’t like that googles method was an all or nothing approach when it came to backing up apps, and didnt have offline back ups.
Was one of the biggest reasons I started moving to foss alternatives.
I wish Firefox would make AI crap be addons as opposed to built into the browser.
If there is a kanban extension or something of the sort you might get the drag and drop list you want.
There is another Google Keep like app called NotallyX. Can even import in your Google keep backups. You can set up password protected auto backups with the app.
As for syncing syncthing as others have mentioned would be the best solution that would let you be able to use whatever you choose to go with.
